Sometimes when Devin is gone and I have nothing to do I like to cook something that takes a long time and go for it. This isn't a easy throw together recipe and takes patience and time. When I cook I can go into a zone and relax. I think I got my dad's ability to throw things in a pot and magic happens. I'm not as good as him, but unlike him, I'm going to try to write them down and share them so they won't be forgotten. So this is Homemade Creamy Chicken Noodle Soup with homemade noodles.
Homemade Creamy Chicken Noodle Soup
Ingredients:
Homemade Noodles1 Cup Flour
1/2 t. Salt
2 Eggs
4 Carrots
5 Celery Stalks
1 Lg. Onion
3 Chicken Breasts
Chicken Stock
1/2 Cup Butter
1 C Milk
1/8 C Parmesan Cheese
Seasoning to Taste:
Garlic Powder
Salt
Pepper
Italian Seasonings
Directions:
Noodles: Place flour, salt and eggs in bowl. It will be a thick dough and sticky, so use plenty of flour on hands and table. After mixed well roll out on table as thin as you can. Then cut into strips (a pizza cutter works miracles).Chop onions, carrots, and celery as small as you want them and place them into a large pot with butter. Use medium heat to cook your vegetables until they are tender and soft. Pour in your chicken stock, enough to cover vegetables, boil your noodles, and extra broth. Toss in your noodles and turn to high. Boil until noodles are tender and cooked all the way through. While it's cooking you can cut your chicken into cubes and saute it until golden browned. After cooked throw it in the pot along with the milk and Parmesan cheese. Season to taste. Let cool and enjoy!

That's funny, I make soup when I don't want to spend a lot of time cooking because it's easier than other stuff. But Anton doesn't like creamy soup, so I make uncreamy chicken noodle soup. :-)
